I saw on Pinterest the other day that you can make Ice cream in a bag. What fun!?
After nap, Olivia and I, made a quick snack of vanilla ice cream. She wasn't quite as excited about this cool idea as I was...
Recipe:
Add 1 TB sugar, splash of vanilla extract, and 1/2 c. milk to a sandwich size freezer bag and seal.
Add 6 TB rock or canning salt to about 6 cups of ice in a gallon size freezer bag.
Place the sealed sandwich bag inside the larger gallon bag and seal.
Shake for about 5 minutes.
Remove the smaller bag, rinse salt off the bag, and serve with your favorite toppings.
ENJOY!
Disclaimer: We made this with skim milk and while it tasted good, it tasted a bit like ice milk. I would try a combination of skim milk and some fat free half and half to really make it creamy.

I have the privilege of reviewing a recent addition to the MOPS library. The book is titled, "Mom connection: creating vibrant relationships in the midst of motherhood". I was sent two copies of the book- one to read and review and one to GIVE away.
My Review:
I have to admit that although I LOVE books, I rarely find (or take) the time to read them. Even less often do I read a Non-fiction or parenting book; and not because I am some kind of super parent...because I am NOT.
One of the first notes I made in my copy of the book was on page 44. "Our routines are brimming with opportunities to spill love into the lives of others. We just have to take a step back and reevaluate." This sentence cuts to the core of what Tracey is trying to get across in this book. We, as moms, are busy with so many things (the good and the bad) that we need to remember to "create vibrant relationships in the midst of motherhood".
The book is separated into 3 sections that discuss why we need a rhythm in our lives, how to create a rhythm for relationships, and how to share our rhythm. At the end of each of her 12 chapters she finishes with "5 Mom-tested Tips". These tips help to reflect on the information in the chapter and encourage you to pray, journal, and begin using what was learned.
I found myself marking quotes and ideas throughout the book on how to encourage friendships, how to manage relationships, and raise children while keeping our focus on God's plans. I feel that Tracey did a great job of encouraging and equipping mothers in this book. It was not only encouraging it was also a valuable starting point for finding great resources. This would be a great book for a summer bible study with friends or wonderful gift to a mom friend who could use some light at the end of the tunnel.
I really like how Tracey finished the book with this quotation, "Ultimately, when we live wisely, in time we discover how to connect vibrantly with one another in that time. And our Mom Connection deepens. Our days are metered, our pace is manageable. Mom connections are around us every day. We just need to open up our lives and step into them."

Easy Peasy Dessert!
I had a last minute craving for Chocolate cake and Peanut butter icing; however, I am still trying to eat healthier.
So, here is a simple and delicious recipe for Chocolate Cupcakes with Peanut Butter icing.
1 box reduced sugar devil's food cake mix
1 c. fat free greek yogurt
1 c. water.
Mix the three ingredients well. Add to lined muffin cups, and bake according to box directions.
YES- it really is that easy!
To finish them off try this yummy peanut butter icing.
1/4 c. butter (room temperature)
1/2 c. peanut butter
2 c. powdered sugar
1/6 c. milk (give or take)
Cream the butter and peanut butter together until smooth. Add half the powdered sugar and beat. Add half the milk, beat. Add the remaining powdered sugar and beat together. Add the milk if the mixture is too thick, and if it is right leave it out.
DONE! It isn't the best photo because I was in a hurry to eat them :)
